Chocolate Mint Bars

Ingredients:

Mint layer

  • 1 avocado

  • 6 tbsp melted coconut oil 

  • 1/4 tsp peppermint extract

Chocolate layer 

  • 1/4 c melted coconut oil

  • 1/4 c cocoa powder

  • 1 tbsp raw honey (or dash of stevia)

  • 1/4 tsp vanilla extract

  • dash salt

  • 1/4 c raw honey (can use 1/16 tsp stevia for lower carb)

  • 1.5 c shredded unswt coconut

  • dash salt

 

 

Directions:

  1. Mix the mint layer in blender, layer in pan and freeze

  2. Mix chocolate layer in bowl, spread over mint layer and freeze again. 

  3. once hardened, cut and serve immediately (it softens quickly)
