Chocolate Mint Bars
Ingredients:
Mint layer

1 avocado
-
6 tbsp melted coconut oil

1/4 tsp peppermint extract
Chocolate layer
-
1/4 c melted coconut oil

1/4 c cocoa powder
-
1 tbsp raw honey (or dash of stevia)

1/4 tsp vanilla extract
-
dash salt
-
1/4 c raw honey (can use 1/16 tsp stevia for lower carb)

1.5 c shredded unswt coconut
-
dash salt
Directions:

Mix the mint layer in blender, layer in pan and freeze
-
Mix chocolate layer in bowl, spread over mint layer and freeze again.
-
once hardened, cut and serve immediately (it softens quickly)
