Quinoa Breakfast Scramble

Serves: 1



  • ½ cup cooked quinoa

  • 2 whole eggs (cook as you like)

  • ½ avocado, cubed

  • 1 tablespoon salsa

  • ½ teaspoon lemon pepper

  • ¼ teaspoon garlic salt




Place quinoa in a serving bowl and top with eggs and avocado.

Top with salsa and sprinkle with lemon pepper and garlic salt.

Lemons (and limes) are a powerhouse when it comes to bringing out flavor in food. I often use fresh lemon over veggies, in quinoa/rice, on eggs, and in water. It’s easy to use and can be a magical fix to a bland dish!
