Egg & Potatoes or Fruit

Serves: 1

 

Ingredients:

  • 2 whole eggs

  • 1 Tbsp coconut oil, organic butter OR Ghee

  • 2 small-med red potatoes (chopped or sliced into bite sized pieces)

  • ½ tsp mineralized salt

  • Optional: garlic powder, rosemary, thyme, basil, parsley, kelp

 

 

Directions:

  1. In medium saucepan, heat oil of choice. Add potatoes, salt and any other spices. Cook until tender and remove from potatoes from the pan.

  2. In the same pan, add a little bit more oil. Cook eggs in desired method (scrambled, over-easy, etc.) Add a pinch of salt and enjoy with potatoes.

  3. If doing fruit, just cook the eggs and have ~1 cup of fruit (your choice on type).

 

Let me explain

When you see the ingredient “Mineralized salt,” I am referring to either Himalayan or Real Salt Sea Salt (see image on left). These salts contain trace minerals that are stripped away with processed salt (like Morton brand).

What about iodine? These are not iodized salts. I recommend getting iodine through other sources like kelp, scallops, sea vegetables, shrimp, and a few others.
