Strawberry Basil Chicken

  • 3-4 large chicken breasts (organic)

  • 3 tbsp olive oil

  • 3 garlic cloves, crushed

  • ½ tsp sea salt

  • ½ tsp pepper

  • 2 cups chopped fresh strawberries (organic)

  • 1 cup chopped fresh basil

  • 3 tbsp balsamic vinegar

  1. Heat a large skillet to medium heat. Add olive oil and garlic, cook for 2 minutes or until fragrant (careful not to burn—burnt garlic ruins errrything).

  2. Salt and pepper each side of chicken—pound if they are super thick (ideally 1 inch thick). Cook for 3-5 minutes per side (until golden brown, but cooked through). Set aside.

  3. Meanwhile, prepare the topping. Toss together strawberries, basil, balsamic and 1 tbsp olive oil. Top each chicken breast with strawberry mixture, and salt and pepper to taste. Add additional balsamic glaze or balsamic if needed. Serve immediately.

  4. Place over greens or serve alongside other veggies (roasted would be a great pair).

Did you know?

Basil is rich in phytonutrients (phyto = plant) that may help prevent or treat a wide variety of health conditions. Studies have shown these nutrients reduce dangerous molecules called free radicals. Free radicals roam around the body and create oxidative damage. Think of this as rust on your car—it comes with time and carelessness but can be prevented or reduced. It’s so much more than a pop of flavor!

Store fresh basil in the fridge wrapped in a slightly damp paper towel to maintain freshness.
