Beef Taco Bowls
Servings: 4
Ingredients:

1lb lean ground beef (100% grass-fed preferred)

1 shallot or 1/2 small onion, chopped

salt and pepper
-
12oz coleslaw mix
-
1 recipe homemade taco seasoning (recipe below)

¼ cup chicken/beef broth or water
-
Toppings/add-ins: guacamole, salsa, green onions, tortilla chips
Homemade taco seasoning:

2 tbs. chili powder
-
1 tsp. salt
-
2 tsp. cumin
-
1 tsp. onion powder
-
1 tsp. smoked paprika
-
½ tsp. oregano
-
½ tsp. black pepper
Directions:

Brown ground beef with shallot or onion, and a dash of salt and pepper, in a large skillet over medium-high heat.

Add coleslaw mix, season lightly with salt and pepper, then saute until cabbage is tender, 3-4 minutes. This is a great meal to add extra veggies that might be on their last leg—celery, broccoli, peppers,etc

Add taco seasoning and broth or water then mix to combine. Serve with toppings and add-ins.
