  • 1 shallot or 1/2 small onion, chopped

  • salt and pepper

  • 12oz coleslaw mix

  • 1 recipe homemade taco seasoning (recipe below)

  • ¼ cup chicken/beef broth or water

  • Toppings/add-ins: guacamole, salsa, green onions, tortilla chips

Homemade taco seasoning:

  • 2 tbs. chili powder

  • 1 tsp. salt

  • 2 tsp. cumin

  • 1 tsp. onion powder

  • 1 tsp. smoked paprika

  • ½ tsp. oregano

  1. Brown ground beef with shallot or onion, and a dash of salt and pepper, in a large skillet over medium-high heat.

  2. Add coleslaw mix, season lightly with salt and pepper, then saute until cabbage is tender, 3-4 minutes. This is a great meal to add extra veggies that might be on their last leg—celery, broccoli, peppers, etc
