Crockpot Creamy Chicken & Wild Rice Soup

Ingredients:

  • 1 1/2 c uncooked wild/brown rice blend (I used Trader Joes organic sprouted blend)

  • 1 1/2 lb boneless chicken

  • 1 large onion, diced

  • 2 c carrots, chopped

  • 2 c celery, chopped

  • 2 bay leaves

  • 2 tsp parsley

  • 1/2 tsp thyme, sage, garlic powder, & salt

  • 4 c veg or ckn broth

  • 3 c water

  • 1/2 c heavy cream or canned coconut milk (if dairy sensitive) 1/2 c almond flour

  • Mineralized salt and pepper

 

 

Directions:

  1. Add everything except cream to crockpot

  2. Cook on low for 6-8 hrs. Remove bay leaves.

  3. Remove chicken to chop/shred & return to crockpot.

  4. In small bowl, mix heavy cream with 1 cup soup broth. Slowly pour that mix into crockpot while stirring.

  5. Taste and season w/ salt and pepper
