Lemon Poppy Seed Muffins

Ingredients:

  • 2 c almond flour

  • 1/4 c coconut flour

  • 1/2 tsp mineralized salt

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 c unswt applesauce

  • 1/2 c fresh lemon juice (~2 lemons)

  • 3 eggs

  • 1/4 c raw honey

  • 1 tsp vanilla extract

  • 2 tbsp poppy seeds

 

 

Directions:

  1. Preheat oven to 350.

  2. Mix dry. Mix wet. Mix all.

  3. Bake 23-25 min.
