Oxtail Soup

Ingredients:

  • 2 T pastured butter (or coconut oil)

  • 1 onion, chopped

  • 4-6 oxtail pieces (mine from Pastimes Farm and Bakery)

  • 2 garlic cloves, chopped

  • 4 carrots, sliced

  • 2 yams or other potato, chopped

  • 2 large parsnips, chopped

  • 1 zucchini, chopped

  • 2 celery stalks, sliced

  • 1 T thyme & rosemary

  • 1 tsp turmeric, ginger, & cinnamon

  • 2 T apple cider vinegar

  • 1 c white wine

  • Mineralized salt to taste

 

 

Directions:

  1. Saute oil, onion, oxtail, thyme, rosemary.

  2. Add garlic & other spices. Add all veggies.

  3. Add wine then enough water to cover everything.

  4. Bring to boil.

  5. Add vinegar.

  6. Lower heat & simmer for few hours
