Salmon Patties

 

Ingredients:

  • 2 eggs

  • 2 cans wild caught salmon (total 12 oz), drained

  • 1 cup almonds, chopped

  • 1/3 cup fresh parsley

  • 1 lemon

  • 3 green onions chopped

 Directions:

  1. Blend eggs, onion, parsley, lemon in blender or food processor 

  2. Chop almonds or blend them in the blender with the rest.

  3. Stir into salmon. 

  4. Make into 1 inch patties (~4)

  5. Heat olive or coconut oil in pan and cook patties 3-4 min on each side. 

  6. Serve with veggies
