Tex-Mex Grain Free Meatballs

Serves: 6 - 8

 

Ingredients:

  • 2 lb grass fed beef

  • 2 eggs

  • 2/3 c diced bell pepper (I had green)

  • 5 green onions

  • 1 diced jalepeno

  • 1/2 c fresh chopped cilantro

  • 2 tsp garlic powder

  • 2 tbsp dried oregano

  • 1/2 c almond flour

  • 1 tbsp mineralized salt

  • 1/2 tsp cracked pepper

 

 

Directions:

  1. Preheat oven to 400

  2. Mix everything in large bowl, make golf ball sized meatballs, space out on parchment paper (on baking sheet)

  3. Bake ~30 min (internal temp of 165)

     

 

Chopping tip: Peppers

  1. Cut in half

  2. If desired, discard the seeds (da hot stuff)

  3. Cut with insides up (this allows the knife to grip better)

  4. Avoid eye contact and wash hands J

Toss extra in eggs, salads, sauces, or maybe a kick to a smoothie
