Tex-Mex Grain Free Meatballs
Serves: 6 - 8
Ingredients:

2 lb grass fed beef

2 eggs
-
2/3 c diced bell pepper (I had green)

5 green onions
-
1 diced jalepeno
-
1/2 c fresh chopped cilantro

2 tsp garlic powder
-
2 tbsp dried oregano
-
1/2 c almond flour
-
1 tbsp mineralized salt
-
1/2 tsp cracked pepper
Directions:

Preheat oven to 400
-
Mix everything in large bowl, make golf ball sized meatballs, space out on parchment paper (on baking sheet)

Bake ~30 min (internal temp of 165)
Chopping tip: Peppers

Cut in half
-
If desired, discard the seeds (da hot stuff)

Cut with insides up (this allows the knife to grip better)
-
Avoid eye contact and wash hands J
Toss extra in eggs, salads, sauces, or maybe a kick to a smoothie
